I am always experimenting in the kitchen with trying to make something delicious but also healthy. While many of my attempts at making “healthy cookies” have been flops, this is one of my favorite recipes. In fact, it’s vegan and gluten free too! So I know you must be thinking how can that possibly be good?! But I promise you they will not only curb your sweet tooth but your body will thank you for the ingredients!

5 ingredient Vegan Chocolate chip cookies
- 2 Mashed bananas
- 2 Cups Gluten Free Oats (I use these, Bobs Red Mill Gluten Free Oats)
- Dash of Cinnamon
- Dash of vanilla
- Vegan Dark Chocolate chips (I use these, Enjoy life Dark Chocolate Morsels)
Preheat the oven to 350 and using coconut oil, lightly grease a baking sheet
In a mixing bowl, mash the bananas until completely smooth.
Once mashed, slowly add the oats and stir until the banana and oats are well combined.I find I sometimes add more oats if the “batter” seems too wet.
Add the vanilla and cinnamon to the batter
Once all the ingredients are well mixed stir in as many or as little chocolate chips as you like (I tend to have a heavy pour with these!)
Shape into circles or whatever shape you wish and place on the pan.
Bake for 15-20 minutes and enjoy right out of the oven or store in the refrigerator for up to a week, if they are not eaten before!
